Update API documentation URL references

The real api of Jaah is <https://app.jaah.ai/api/> but the docs all refer to <https://api.jaah.ai/api/> Fix it.

Outcome

API docs now point at https://app.jaah.ai/api/: base-URL line plus curl in access.md, the readiness-checklist probe, and public-URL fixtures. Tailnet/infra api.jaah.ai left as is (operator's choice). Quick gate green; PR #7016 queued. Memory: none applied.
